Beet POke BOWL
1. The complete recipe can be found here at Shutterbean. I decided to combine rice and quinoa for my grains. I made a cup and a half of rice and a cup of quinoa. The beets I roasted during the morning, so I would be able to marinate them a while before dinner. I added the beets, cucumber, sesame seeds, green onions and marinade and let that chill in the fridge for a few hours. Add the avacado last.
2. Once my grains were done, the bowl came together very fast. I did a bottom layer of the rice and quinoa. I added the avacado to the beets and a few more sesame seeds and added that into the bowl. Shread some carrots, and pile on some Edamame beans.
3. Cut your Nori sheets into confetti like pieces and top your bowl with seaweed sprinkles. I also added cilantro/parsley combo along with some grated ginger. Once we were ready to eat I topped my bowl w some Wasabi Paste and a little Sriracha.
This meal was actually one of my top Vegan dups. The roasted beets were amazing and the marinade was spot on! If only use Golden Beets the color is so similar to Shasimi. I used both red and golden. It is still baby friendly too! My daughter loved it!
